    Salad Onion Mash

    This creamy mash rippled with salad onions is a great accompaniment for chicken hotpot.

    Serves: 4

    Ingredients

    • 2 x 114g packs trimmed salad onions
    • 2.5kg floury potatoes
    • 200ml whole milk
    • 25g butter

    Method

    1. Peel 2.5kg floury potatoes, such as King Edwards, and cut into equal-sized cubes. Put in a large pan, cover with cold water, bring to the boil and simmer for 15-20 minutes until cooked. Drain thoroughly. Place 200ml whole milk, 2 x 114g packs trimmed salad onions, thinly sliced, and 25g butter in a small pan and heat gently without boiling. Mash the potatoes, then beat in the onion milk using a wooden spoon to make a soft mash. Season and serve.
