Salmon & rice medley

½ tbsp olive oil
1 red pepper, diced
4 salad onions, sliced
250g pack Waitrose Microwaveable Wholegrain Rice
Half 100g pack Waitrose Scottish Smoked Salmon, shredded
Juice ½ lemon
75g half fat crème fraîche
2 tsp creamed horseradish sauce
1. Heat the oil in a frying pan and stir-fry the pepper for 2 minutes, add the onions and fry for a further 1 minute. Microwave the rice and stir it into the pan with the smoked salmon. Cook for 1-2 minutes.
2. Meanwhile, mix together the lemon juice, crème fraîche and horseradish sauce and stir into the rice.Serve with salad.
