    Salmon with quinoa crust

    • Total time: 35 minutes

    Serves: 2

    Ingredients

    50g Waitrose Love Life Bulgur Wheat With White & Red Quinoa
    2 tsp wholegrain mustard
    1 tsp clear honey
    Finely grated zest 1 lemon
    ½ x red chilli, chopped
    25g pack flat leaf parsley
    280g pack Waitrose 2 Scottish Salmon Fillets
    Spray olive oil

    Method

    1. Preheat the oven to 200°C, gas mark 6. Bring 750ml water to the boil, then add the bulgur wheat mix. Simmer for 12 minutes. Drain then mix with the mustard, honey, lemon zest, chilli and most of the parsley. Season.

    2. Press the bulgur wheat mix onto the salmon fillets and place the fish on a baking tray. Spray with a little oil and roast in the oven for 18-20 minutes, until the salmon is cooked through and the crust is just golden. Sprinkle with the remaining parsley. Serve with green beans and lemon wedges.
