    Salmon Cubes with Shiitake Butter

    • Cooking time: 10 minutes
    • Total time: 15 minutes 15 minutes

    • 75g unsalted butter
    • 75g shiitake mushrooms, chopped
    • 6 salad onions, shredded
    • 300g thick, skinless salmon fillet, cut into 12 cubes
    • 1 small red chilli, deseeded and chopped
    • 3 tbsp sake
    • 2 tbsp light soy sauce
    • 12 coriander leaves


    1. Melt the butter in a pan over a medium heat. Add the mushrooms and cook for 2-3 minutes. Add the onions and salmon. Cook for 2 minutes. Turn the salmon over and add the chilli, sake and soy sauce. Cover and cook for 2 minutes.
    2. Arrange the salmon either on 12 large, warmed spoons, or on a warm plate. Pour the mushroom butter over the salmon, garnish with the coriander leaves and serve hot.
