    Sardine Pâtè

    • Preparation time: 30 minutes, plus cooling
    • Total time: 30 minutes, plus cooling 30 minutes

    Serves: 4


    • 500g sardines, cleaned and filleted
    • 1 tbsp olive oil
    • 100g unsalted butter, softened
    • Generous pinch of cayenne pepper
    • Salt and freshly ground black pepper
    • Juice of 1 lemon
    • 3 tbsp double cream


    1. Preheat a griddle pan over a medium-high heat.
    2. Lightly oil the filleted sardines and, when the griddle pan is smoking slightly, cook the sardines, flesh-side down, for 1-2 minutes. Then turn over and cook for another minute. Transfer to a plate to cool. Once the fish is tepid, remove and discard the skin and flake the flesh. Set aside.
    3. Meanwhile, beat the softened butter with cayenne pepper, salt and black pepper to taste until it is light and fluffy. Mix in the lemon juice followed by the cream. Then add the cooled, flaked fish and beat in. Alternatively, you can mix the pâté in a food processor but do not over-process.

    Serve with lemon wedges and crusty bread - Irish soda bread is particularly good.
