Sardines on toast

Serves: 4
6 essential Waitrose tomatoes
½ red onion, finely sliced
1 tbsp chopped dill
3 tbsp olive oil
2 tsp red wine vinegar
1 tbsp essential Waitrose hot horseradish sauce
3 tbsp Waitrose half fat crème fraîche
8 sardine fillets
1. For a quick and easy lunch, slice the tomatoes and put in a bowl with the onion and dill. Pour over 1 tbsp olive oil and the red wine vinegar, season and toss together.
2. Mix the horseradish sauce with the crème fraîche on put to one side.
3. Preheat the grill to medium-high. Cut 4 thick slices from a loaf of crusty wholemeal bread, brush with 1 tsp olive oil, and grill for 1 minute on each side until lightly toasted. Place the sardine fillets, skin-side up, on a foil-lined baking tray and brush with the remaining olive oil, season and grill for 2-3 minutes until cooked through.
4.Top each slice of toast with the tomato salad and 2 sardine fillets. Spoon over the horseradish crème fraîche and serve.
