Sausage, artichoke and rocket pizza

Makes: 1 x 13-inch pizza, 8 slices
2 tbsp olive oil
1 garlic clove, finely chopped
400g can chopped tomatoes
1 veal, pork and fennel sausage
140g sliced artichoke hearts in oil, drained and patted dry with kitchen paper
125g buffalo mozzarella, in pieces
1 x handful rocket leaves
1 x handful basil leaves
1. For the sauce, warm the olive oil in a pan over a medium heat. Add the garlic and cook for 1 - 2 minutes until soft, then add the tomatoes and season. Cook for about 20 minutes until thickened. Allow to cool a little, then chill until ready to use.
2. Preheat the oven to the highest setting. Spread the tomato sauce over the pizza base (any extra will freeze well). Skin the sausages, break up the meat into small pieces and scatter over, along with the artichokes and mozzarella. Cook for 8 - 10 minutes, then remove from the oven and scatter over the rocket and basil.
