225g thinly sliced new potatoes
2 tsp olive oil
3 Waitrose Toulouse Style Sausages
1 tbsp chopped chives
4 large Waitrose Columbian Blacktail Eggs
1. Parboil the new potatoes for 5–7 minutes until just tender. Preheat the grill to high. Heat a 20cm frying pan with the olive oil, add the potatoes to the pan and cook for about 10 minutes, turning regularly. Remove from the pan and set aside. Skin the sausages, break into chunks then add to the pan for 3–4 minutes. Add the potatoes and scatter with the chives.
2. Whisk and season the eggs then pour over the potatoes and sausage. Quickly turn over the sausage and potatoes to make sure the egg reaches the bottom of the pan, then cook over a medium heat for 5 minutes. Chop the tomatoes then place on top and grill for 3–4 minutes until golden. Serve with a green salad.
