Savoury Baked Apples with Camembert and Walnuts

Ingredients

4 large eating apples, such as Empire, Cox’s or Early Windsor

75g Cornish Llawnroc Camembert

25g walnut pieces

1 shallot, finely chopped

½ tsp fresh thyme leaves

130g pack Waitrose Herb Salad
Method

Preheat the oven to 180°C, gas mark 4. Using an apple corer, remove the core from each apple. With a small, sharp knife, lightly score horizontally around the middle of each apple. Place in an ovenproof baking dish, just large enough to hold the apples.

Place the Camembert in a bowl and mash roughly with a fork. Mix in the walnuts, shallot and thyme, then season to taste.

Spoon the mixture into each apple, pressing it in firmly to ensure they are completely full. Cover the baking dish with a spacious tent of foil and seal the edges.

Place into the oven and cook for 20 minutes. Remove the foil and cook for a further 10 minutes, until the filling is bubbling and golden and the apples are soft.

Divide the salad leaves between 4 plates and top with an apple. Drizzle the leaves with any juices left in the baking dish and serve immediately with hunks of walnut bread.
