    Scrambled Eggs with Watercress and Smoked Salmon

    • Cooking time: 3 minutes
    • Total time: 8 minutes 10 minutes

    Serves: 2

    Ingredients

    • 1 bunch Watercress (about 50g)
    • 4 eggs
    • 1 tbsp Olive oil
    • 4 slices Smoked salmon

    Method

    1. Wash and trim the watercress. Softly scramble the eggs in a little olive oil in a medium pan. Season and serve next to or with the salmon. You can place the watercress around the eggs, or on the top, as you wish.
