    Sea Bass Fillets With Prawn and Chilli Butter

    A stylish dish that's quick and simple to prepare and great for a relaxed supper for two.

    Ingredients

    • 1 lemon
    • 50g cooked and peeled prawns
    • 25g butter, at room temperature
    • 1 red chilli, deseeded and finely chopped
    • ½ x 20g pack fresh flat-leaf parsley, finely chopped
    • 2 x 150g Waitrose Sea Bass Fillets

    Method

    1. Cut 2 thin slices from the lemon, then grate the zest of the remainder and squeeze the juice.
    2. Reserve 6 prawns to garnish, then finely chop the rest. Place in a small bowl, add the butter and mash together well. Stir in the chilli,lemon zest and juice, 2 tablespoons of the chopped parsley and some seasoning. Cover and chill in the fridge.
    3. Place the sea bass fillets on a heatproof plate and top each one with a slice of lemon. Place the plate in a steamer or sit it over a pan of simmering water, and cover. Steam for 4 minutes.
    4. Top the fish with the prawn butter and scatter with the whole prawns. Cover and continue to steam for a further 2-3 minutes until the fish is cooked and the prawns are piping hot.
    5. Carefully transfer to 2 plates and serve with Waitrose Lemon and Garlic Couscous and steamed French beans.

    Cook's tips

    If you prefer, top the fish with the lemon slices, cover and microwave on high for 3 minutes. Uncover and spoon over prawn butter, then cook for 1 minute on high. If preferred, use dill or basil instead of parsley.

    Drinks recommendation

    Semillon/Sauvignon Blanc is ideal for serving with sea bass.
