    Sea Bass with Tomato, Lemon and Myrtle Dressing

    Myrtle is a herb used in Middle Eastern and Mediterranean food. It has a sweet, spicy flavour.

    • 2 tsp Waitrose Cooks' Ingredients Wild Myrtle
    • 4 tbsp Waitrose Cooks' Ingredients Lemon Infused Extra Virgin Olive Oil
    • 3 tbsp olive oil
    • 2 tsp Waitrose Cooks' Ingredients Sicilian Lemon Juice
    • 3 medium vine tomatoes, peeled, deseeded and diced
    • ½ bunch salad onions, finely chopped
    • 4 sea bass fillets
    • Waitrose Cooks' Ingredients Anglesey Sea Salt


    1. Finely crush the myrtle using a mortar and pestle and place in a small saucepan with the lemon-infused oil, 2 tablespoons of the olive oil, the lemon juice, tomatoes and salad onions.
    2. Season the fillets with the sea salt and freshly ground black pepper. Heat the remaining oil in a non-stick frying pan, then place the fish, skin-side down, in the hot pan. Press down lightly with a fish slice and cook for 2 minutes until the skin is brown and crisp. Turn the fillets over and cook for a further 2 minutes until just cooked.
    3. Meanwhile, gently heat the dressing until warmed through. Season and serve with the fish.
