Seafood & chargrilled vegetable couscous

100g giant wholegrain couscous
1 tbsp oil
200g frozen fruits de mer, defrosted
200g frozen grilled vegetables
1 tbsp basil pesto
½ x 25g pack parsley, chopped
1. Cook the couscous in boiling water for 6-8 minutes until tender then drain. Meanwhile, heat the oil and fry the fruits de mer and grilled vegetables in a frying pan for 3-4 minutes. Stir in the pesto and cook for 1 minute.
2. Stir in the couscous and then the parsley. Season to taste and serve.
