    Seafood and Fennel Salad

    Prepared salad leaves and marinated seafood make this so simple to prepare, but it's best to marinate overnight to give the oil and lemon time to soften the fennel.

    • Preparation time: 5 minutes preparation and 30 minutes marinating (or preferably overnight)
    • Total time: 35 minutes 35 minutes

    Serves: 4


    • Large fennel bulb, thinly sliced
    • 50ml olive oil
    • Juice of 1 lemon
    • Salt
    • Freshly ground black pepper
    • 2 x 110g bags Waitrose Aromatic Herb Gourmet Salad
    • 2-3 x 160g tubs Waitrose Marinated Seafood
    • 2 limes, halved, to serve


    1. Place the fennel in a shallow bowl. Drizzle with oil and lemon juice. Season, cover and leave for at least 30 minutes.
    2. Arrange the herb salad on a serving plate, add the fennel and seafood. Serve with lime halves.
