    Seafood Spaghetti with Almonds

    Rich in protein, this is a low-fat Oriental-inspired dish that is full of flavour and makes a very generous main course. You'll find Marcona Almonds with the prepacked nuts in the fresh fruit and vegetable section.

    Serves: 4

    Ingredients

    • 200g Waitrose Scottish Salmon Fillet, skinned
    • 2 tbsp light soy sauce
    • 500g pack Waitrose Fresh Spaghetti
    • 1 tsp sesame oil
    • 2 x 100g packs Waitrose North Atlantic Peeled and Cooked Prawns
    • 2 x 150g packs Waitrose Trimmed Mangetout
    • 25g Waitrose Roasted Marcona Almonds

    Method

    1. Preheat the grill to high. Place the salmon fillets on a baking tray and brush with half the soy sauce. Grill for 4 minutes, then turn and brush with the remaining soy. Grill for a further 4 minutes, or until cooked.
    2. Cook the pasta in a large pan of boiling water for 3 minutes until tender. Drain. Heat the sesame oil in a wok and stir-fry the prawns and mangetout for 3-4 minutes, or until just tender.
    3. Flake the salmon and add to the wok with the hot pasta and the almonds. Toss to mix and serve immediately.
