    Seafood Spaghetti with Lemon Rocket

    This quick and easy pasta dish with seafood is ideal as a starter for a summertime meal and makes the most of prepared ingredients from the chiller cabinet.

    • Preparation time: 5 minutes
    • Cooking time: 5 minutes
    • Total time: 10 minutes 10 minutes

    Serves: 4 as a starter


    • 2 tbsp Waitrose Pinenuts
    • ½ x 500g pack Waitrose Fresh Egg Pasta Spaghetti
    • 2 x 160g packs Waitrose Marinated Seafood Salad
    • 50g pack Waitrose Wild Rocket
    • Grated zest and juice 1 lemon
    • 2 tbsp chopped fresh parsley


    1. Place the pinenuts in a small preheated frying pan and cook over a moderate heat for 2-3 minutes until lightly toasted, taking care as they brown very quickly. Once golden brown, remove from the pan.
    2. Cook the pasta according to the pack instructions. Drain, cover and return to the hot pan.
    3. Add the seafood salad to the spaghetti and return the pan to a moderate heat. Stir gently for 2-3 minutes until piping hot.
    4. Add the rocket, lemon zest and juice and cook for 1 minute, or until the rocket has wilted. Stir in the parsley.
    5. Divide the pasta between four serving bowls and sprinkle with the toasted pinenuts and freshly ground black pepper. Serve immediately with Waitrose Tomato and Garlic Flatbread (find this in the chiller cabinet).
