    Seared Thai Salmon with Broccoli

    • Preparation time: 5 minutes
    • Cooking time: 10 minutes

    Serves: 2

    Ingredients

    • 2 tbsp Thai Taste Red Curry Paste
    • 1 tbsp groundnut oil
    • 1 pack Waitrose 2 Select Farm Salmon Fillets
    • 1 tbsp Cooks' Ingredients Chopped Ginger, drained
    • 200g essential Waitrose Broccoli, cut into florets
    • 1 small essential Waitrose Red Onion, sliced
    • 1 tbsp Cooks' Ingredients Dark Soya Sauce

    Method

    1. Rub the curry paste over the salmon. Heat a little oil in a non-stick frying pan and cook the salmon for 4-5 minutes each side, turning once until cooked through.
    2. Meanwhile, heat the remaining oil in a wok, add the ginger, cook briefly, then add the broccoli and onion. Stir-fry for 3-4 minutes, until almost tender. Add the soya sauce and serve with the salmon.
