Seriously Creamy Amarula Pineapple and Ginger Cheesecake

Creamy amurala cheescake with delicious crushed ginger base and pineapple topping.

The Amarula liquer with the zing of ginger and pineapple brings out the freshness of and lightness of summer, just like a summer breeze.

Ingredients

  • Crust
    1 cup gingerbread or ginger biscuit crumbs
    100g, melted
    2 tablespoons sugar

    Filling
    2 tubs soft cream cheese or fromage frais,
    1 tub mascarpone cheese
    3 tablespoons castor sugar
    4 eggs
    1/4 cup Amarula cream liqueur
    3 teaspoons vanilla
    Slices of pineapple for topping
