Seriously Creamy Aronia cream

Ramekins with a layer of sweetened aronia berries topped with a very rich custard.

What makes it the ultimate summer Seriously From Waitrose dessert?

Rich, creamy, healthy (the berries) and unusual (aronia berries are not yet grown much in this country). Perfect for rounding off a dinner party or any other occasion.

  • 125 g aronia berries
    75 g sugar

    300 ml milk
    300 ml double cream
    30 g sugar
    5 egg yolks

  1. Gently stew aronia berries with 75 g sugar and a little water until soft and thickened. Mix egg yolks, sugar and vanilla essence. Heat milk and cream until close to boiling, add to egg yolk mixture and stir well, return to heat, stirring continuously, until thickened, but do not allow to boil. Divide stewed berries into six and spread on bottom of ramekin dishes. Pour cooled custard over the top and chill until set. Amounts of sugar could be varied to taste, aronia berries are sharp.
