Seriously Creamy Baileys cheesecake with white chocolate sauce

A baked biscuit base (I make mine using wheat free flour), with a seriously creamy cheesecake topping infused with a good swig of Baileys. All topped off with a creamy white chocolate sauce.

Baileys and white chocolate - a girls heaven. Seriously naughty and seriously creamy, like a cocktail on a plate.Simple yet delicious

Ingredients

  • Base: flour, a pinch of baking powder, butter, sugar and an egg
    Cheesecake: soft cheese, eggs, sugar, baileys
    Sauce: cream, white chocolate

Method

  1. Mix the flour, baking powder a, butter and sugar to a sandy consistensy. Add egg to bring to a dough. Compress into tin, cook for 30 mins approx. Mix cheese, eggs, bailys and sugar until light and creamy. Pour over cooled base and bake (within water filled tray). Make choc sauce by bringing cream to boiling point, stir over white chocolate and stir until melted.
