    biscuit based cheesecake with no cooking involved

    What makes it the ultimate summer Seriously From Waitrose dessert?

    Using a lime jelly is particularly refreshing. Any flavour jelly could be used and if wanted decorated with fruits of same flavour and colour.


    • 10 digestive biscuits,4oz butter, one whole jelly, six ounces boiling water, 300gr low fat cottage cheese and 125ml single cream.


    1. make biscuit base, dissolve jelly in boiling water. Pour jelly, when cooled down into a liquidiser with the cottage cheese and single cream and then whiz it until it is as smooth as cream. Pour on top of biscuit base and put in refrigerator to set.
