Seriously Creamy Ginger and Sherry Cream Cake

This is a family favourite, simple and quick. Ginger nut biscuits soaked in sherry and orange juice and layed with whipped cream. Layers of fruit such as banana or manderin are optional and the whole thing is topped off with grated dark chocolate.

It is very versatile, with many variations possible - from Dark Chocolate and Coffee with Raspberries, to Ginger, Pineapple and Zesty Orange...and it will only get better with time! Cooling and light, it hits the spot on a warm summers' day!
