Seriously Creamy Kirch cherry & cinnammon cheesecake

Boozy, rich, and creamy baked cheesecake with kirch soaked cherries baked inside and lightly spiced with cinnammon.

What makes it the ultimate summer Seriously From Waitrose dessert?

It's deliciously indulgent and sophisticated, and rich and cooling when eaten straight from the fridge.

  • Digestive biscuits and butter for base
    250g curd cheese
    250g cream cheese
    140ml double cream
    75g icing sugar
    25g cornflour
    3 eggs
    1/2 tsp vanilla bean paste
    350g kirch soaked cherries

  1. Combine butter and biscuits, and push into the bottom of a round tin to form the base. Combine cheese, cream, icing sugar and cornflour. Add the eggs (beaten) and vanilla paste. Pour on top of the base and bake for 45 mins to 1 hour until set, leaving in the oven to cool for another 2 hours.
