Seriously Creamy Margaret's Marvellous Meringue

A light fluffy citrony meringue upon a ginger flavoured biscuit base. This is a super summer desert with a soft fluffy meringue topping and interesting fruity combination. It is best eaten chilled in summer. with cream if you feel indulgant! But it is also a super winter desert if eaten with fresh warm custard.

What makes it the ultimate summer Seriously From Waitrose dessert?

The combination of ginger and lemon, although it might sound strange, is fantastic. They go really well together.


  • For the base:
    Biscuit crumbs (digestives, or any)
    Ground ginger

    For the meringue:
    4 large egg whites
    200 grams of white sugar
    Lemon zest
    Juice from squeezed lemon or lemon flavouring


  1. 1. Ground the biscuits into fine crumbs. 2. Warm butter in a frying pan, when melted add the biscuit crumbs and ginger. Mix. Spread in a small baking tray and firm down with spoon.3. Whisk egg whites in a bowl, slowly add sugarand lemon zest, juice. When fluffy add to baking tray. Cook for 90 mins.
