Seriously Fruity Apple and Apricot Lattice Cake

A light and tasty apple cake sweetened with tangy apricot compote beautifully presented in a lattice design.

What makes it the ultimate summer Seriously From Waitrose dessert?

With its seriously fruity taste, this apple and apricot lattice cake is the perfect end to a lazy summer lunch or mellow evening meal. Served hot or cold, on it's own or with cream or ice cream, it will be enjoyed by family and friends of all ages.


  • 5oz butter
    3oz castor sugar
    1 egg
    7oz self-raising flour
    pinch of salt
    1lb cooking apples
    lemon juice
    2 tbsp sugar
    2 tbsp apricot compote
    icing sugar


  1. Cream together butter and castor sugar, then beat in egg Fold in sifted flour and salt Spread 3/4 of mixture over the bottom of a greased 7" tin Peel, core and slice apples and squeeze lemon juice over them. Arrange overlapping slices of apple on the mixture in the tin and sprinkle with 2 tbsp of sugar. Brush with the melted apricot compote. Using the remaining mixture, roll into strips and arrange in a lattice pattern over the apples. Bake for 1 hour and dust with icing sugar whilst hot
