Seriously Fruity Drunken Rhubarb and Ginger crumble

Inspired by Waitrose's Christmas special 'stem ginger in whisky' this desert is gently stewed rhubarb with finely diced stem ginger balls and some of the whiskyish ginger syrup to replace sugar. Topped with crumble and ground almonds, served with ice-cream. Truly scrumptious.

What makes it the ultimate summer Seriously From Waitrose dessert?

The sublime combination of the sharp rhubarb, luscious sweet spiciness of the ginger and the indulgence of the tiny amount of liquer. A grown up desert, but loved by everyone.
