    A delicious sweet short pastry base topped with a puree of gooseberries and elderflower and finished with an indulgent meringue

    An early summer dessert, delicious but sometimes under-rated English gooseberries and elderflowers combined to transform a traditional English recipe into a real summertime special!


    • Sweet short pastry for base
      Gooseberry puree, thickened with egg yolk and cornflour if required, and flavoured with elderflower - cordial would be fine if fresh elderflowers are difficult to source.
