Seriously Fruity Jane's Apple Pie

A very unusual and moreish version of the English favourite - Apple pie. Very good eaten hot or cold.

  • A Pastry case (in a flan tin)
    4oz Butter
    4oz Sugar
    2 eggs
    2 large cooking apples
    raspberry jam and vanilla esence


  1. Spread a thin layer of the jam over the bottom of the pastry case then roughly grate the peeled and cored apples into the flan. Cream the butter with the sugar until pale and creamy. Add the well beaten eggs and a few drops of the vanilla essence. Spoon the mixture over the apples to cover them. Bake for 10 mins in a hot oven (200C) then reduce to 150C for a further 35 mins until golden brown and softly set. When cool the mixture will sink into the apples. Serve with lots of whipped cream!
