    Seriously Fruity Seriously Tropical

    This is a new sub-range, taking its inspiration from tropical cocktail drinks, but using the flavours, NOT the alcohol. Top of my list is Pina Colada, a little pot with layers of pineapple, coconut cream and lime zest topping. Next is Planters, with guava, orange and a caramel topping.

    What makes it the ultimate summer Seriously From Waitrose dessert?

    The tropical / caribbean inspiration.


    • Pina Colada version: Pineapple, coconut, lime
      Planters version: Guava, orange, caramel
      (and ad lib...!)


    1. The common theme in the recipe is a fruit flavoured base as a rich compote, made in a similar way to that in a lemon meringue pie but with small pieces of fruit remaining. Then a differently flavoured light creamy layer over it, similar to that in a key lime pie. Add zest or fruit pieces to the top to balance acidity and decorate.
