Seriously Fruity Summer Berry Tart

This tart has a layer of mixed berries topped with an almondy sponge, which when baked is turned out like a tart tatin so the fruity layer is on the top

What makes it the ultimate summer Seriously From Waitrose dessert?

Because its full of summer berry sunshine and flavour.

  • 1 llb mixed soft fruit ie raspberries blackberries redcurrants blackcurrants etc
    2 oz caster sugar
    1 tbs flour
    3oz ground almonds

  1. line a pie tin or dish with baking parchment, scatter the mixed fruit in the base with a little sugar. Beat the eggs and sugar together for about 3-4 mins or until it leaves a trail. Combine the flour and almonds then fold into the beaten eggs, carfully to retain the air. Spread the mixture on top of the fruit base then bake in the oven (about 180c ) for about 15mins.
