What makes it the ultimate summer Seriously From Waitrose dessert?

Red fruit is a must in summer, it has a short season and needs to be eaten as much as possible. Frozen fruits are a poor substitute!


  • Good quality white bread, slightly stale medium to thin slices
    Fruits to include blackcurrants, redcurrants, raspberries & strawberries (easy on blackcurrants as they tend to dominate)


  1. Prepare currants and mix with sugar (to taste) Leave at room temp overnight. Slowly dissolve any remaining sugar, simmer for a few minutes, add raspberries, simmer for 1 minute, add strawberries cut into smaller pieces. Allow to cool, if too thick add some water or fruity liqueur (cherry brandy) Cut bread into circles to cover base, middle and top of a dariole mould, strain fruit and dip bread circle in juice, place at bottom of dariole mould, top with fruit and continue to layer. Chill!
