What makes it the ultimate summer Seriously From Waitrose dessert?

it is absolutely delicious

Ingredients

  • pastry 150g flour 75g butter 50g caster sugar 2 egg yolks filling 100g butter 100g caster sugar 1 egg & 1 egg yolk 2 tsp brandy 100 g ground almonds 3 drops almond essence 25g flour

Method

  1. pastry, mix to a smooth dough & chill , roll out to line flan ring 23cm . almond filling, cream butter & sugar add the egg plus yolk stur in brandy almond essence & flour, spread into case slice the pears arrange on top, bake at 170 for 25 mins untill pears are tender while still warm brush with melted apricot jam to glaze
