Seriously Nutty Red Plum and Poppy Seed Tart

Shortcrust pastry based tart with a thin layer of sweet cottage cheese topped with a thicker layer of sweet poppy seed paste, covered with thinly sliced red glazed plums. Tee layers of cottage cheese and poppy seeds paste can also be reversed.

What makes it the ultimate summer Seriously From Waitrose dessert?

This is a delicious dessert with a refreshing twist, the sweet poppy seed paste is comlemented by the zesty but still sweet plums. It is also delicious to look at with its lovely contrasting layers of white cottage cheese and poppy seeds. This is a light dessert perfect the summer.

Ingredients

  • Shortcrust pastry for lining the baking dish

    250 g Ricotta or cottage cheese
    1 egg yolk
    100 g caster sugar

    100g milled poppy seeds
    2 tbsp caster sugar
    150 ml milk
    zest of half a lemon

    2 red plums, thinly sliced
    glaze

Method

  1. Line a round baking dish with the shortcrust pastry. Whisk the cottage cheese, egg yolk and sugar until smooth and spread as this mixture as the base layer on top of the pastry. Mix the poppy seeds, sugar and milk and simmer over a gentle heat until the mixture forms a not too runny paste (c 10 mins). take off the heat and add the lemon zest. Spread on top of the cottage cheese mixture. Arrange the sliced plums on top and bake for c. 30-40 mins (180 degrees celsia) until the pastry is golden.
