    This dessert is almost like a lemon ice-cream biscuit sandwich, it's beautifully tangy and creamy. It's a frozen mousse inbetween a base and topping of crushed shortbread.

    What makes it the ultimate summer Seriously From Waitrose dessert?

    This is a perfect summer dessert. It should be made the night before, or well in advance and kept in the freezer, so the hostess can enjoy the company of her guests and not worry about cooking the dessert. This dessert is ideal for summer entertaining, because it's easy to make, and has all the perfect ingredients for a summer dessert - tangy lemon and smooth whipped cream.


    • 3 eggs, separated
      4 oz caster sugar
      The juice and finely grated zest of 2 unwaxed lemons
      half pint double cream
      8 oz tub of greek strained yogurt
      6oz shortbread biscuits, crushed

      Lightly greased 2lb loaf tin
