    Sesame chicken with apple and carrot slaw

    If you already have some tahini, now is the time to use it – it adds an extra sesame hit to this dish. But if not, fear not, as the recipe works perfectly well without it.

    • Cooking time: 10 minutes
    • Total time: 25 minutes 25 minutes

    Serves: 4


    • 2 tsp Finely grated fresh root ginger
    • 1 tsp Clear honey
    • 1 Lemon, juice and zest, finely grated
    • 4 tbsp Sesame oil
    • 4 Chicken breasts, skin on
    • 4 Carrots, shredded or finely grated
    • 2 Crisp eating apples, cored and cut into matchsticks
    • 2 tbsp Chopped parsley
    • 4 Salad onions, finely sliced
    • 1 tbsp Tahini paste
    • 2 tbsp Sesame seeds, toasted


    1. Mix together the ginger, honey, lemon juice and zest, and oil. Spoon half this mixture over the chicken in a ceramic dish and set aside for 10 minutes.
    2. Mix the carrots, apples and parsley in a salad bowl. Then stir the salad onion and tahini into the remaining dressing. Fold this through the slaw
    3. Preheat a barbecue, griddle or frying pan; sear the chicken for about 8 minutes, turning frequently, until cooked through and browned. Divide the slaw between four plates and top with the chicken and a sprinkle of toasted sesame seeds.
