    Sesame fried aubergines

    Try this tasty vegetarian Greek mezze

    Serves: Serves 6 as a mezze

    Ingredients

    • 200ml essential Waitrose mild and light olive oil, for frying
    • 2 tbsp sesame seeds, lightly toasted
    • 2 tbsp shredded mint
    • 2 aubergines, in 2cm-thick slices
    • 2 tsp sea salt
    • 75g plain flour
    • 150ml sparkling water, chilled

    Method

    1. Place the aubergines in a colander and sprinkle with 1½ tsp sea salt. Weight the aubergines with a small plate and leave in the sink to drain for 30 minutes.
    2. Pat the slices dry with kitchen paper. Put the flour in a bowl and gradually whisk in the sparkling water and remaining ½ tsp salt to form a light, smooth batter.
    3. Heat the oil in a pan set over a medium-high flame. Briefly dip each aubergine slice into the batter; fry, in batches, for 2–3 minutes on each side, until golden. Drain on kitchen paper and keep warm while you fry the remaining slices.
    4. To serve, scatter the fried aubergine with the sesame seeds and mint leaves.
