    Shiitake Mushroom and Blue Cheese Salad

    Serves: 2

    Ingredients

    • 75g whole, organic shiitake mushrooms
    • Olive oil
    • 150g watercress
    • 125g blue cheese , such as Dolcelatte or Stilton
    • 50g of shelled walnuts

    Method

    1. Roughly chop 50g of shelled walnuts and toast lightly.
    2. Lightly fry around 75g whole, organic shiitake mushrooms in olive oil for 8 minutes.
    3. Allow both to cool. Toss the walnuts, mushrooms, 150g watercress and a drizzle of olive oil together with 125g blue cheese , such as Dolcelatte or Stilton, roughly broken into chunks.
