    Shredded Pork Wraps

    Serve these wraps ready-assembled, or allow people to do it themselves.

    • Cooking time: 60 minutes

    Serves: 4


    • 100g couscous
    • 600g British pork fillet
    • 200g tub Waitrose Marinated and Grilled Red and Yellow Peppers, chopped
    • 1 pack Bart 8 Wheat Flour Tortillas
    • 225g pack Waitrose Solo Baby Spinach
    • For the sauce
    • 2 tbsp olive oil
    • 1 large onion, finely chopped
    • 1 clove garlic, crushed
    • 2 tbsp cider vinegar or white wine vinegar
    • 100ml tomato ketchup
    • 2 tsp Worcestershire sauce
    • 150ml apple juice
    • 2 tbsp Waitrose Spiced Peach Chutney
    • Salt
    • Freshly ground black pepper


    1. Prepare the couscous according to the pack instructions and allow to cool.
    2. To make the sauce, heat the oil in a flameproof casserole with a tight-fitting lid and gently fry the onion and garlic for 4-5 minutes until soft. Add the remaining sauce ingredients, bring to the boil, then simmer for 10 minutes.
    3. Add the pork fillet, season, cover and simmer for 45 minutes or until the pork falls apart easily.
    4. Use 2 forks to shred the pork. Stir the peppers into the couscous and pile onto the tortillas (heated through if you prefer) with some spinach. Add pork and sauce, roll up the tortillas and eat straightaway.
