    Slow-roasted Cherry Tomatoes

    • Vegetarian

    Ingredients

    • 300g cherry vine tomatoes
    • Freshly ground black pepper
    • Salt
    • 2 tbsp olive oil

    Method

    1. Preheat oven to 150°C, gas mark 2. Cut 300g cherry vine tomatoes in half, place in a roasting tin, cut-side up, and drizzle with 2 tbsp olive oil.
    2. Sprinkle with salt and freshly ground black pepper and roast them for 1 hour. Leave to cool and then cover and store in the fridge. They will keep well for upto 1 week. Serve with the pan-fried bacon and malt loaf stacks..
