Smoked mackerel fishcakes

1 pack essential Waitrose Peppered Smoked Mackerel Fillets
400g pack essential Waitrose Mashed Potato
½ bunch essential Waitrose Salad Onions, sliced
2 tbsp essential Waitrose Plain Flour
2 tbsp oil
250g pack essential Waitrose Beetroot Salad
1. Remove the bones and skin from the mackerel and break up the flesh into small flakes. Mix into the potato with the salad onions and flour, season and divide into four.
2. Mould into 4 fishcakes and chill for 10 minutes.
3. Heat the oil in a frying pan and fry the fishcakes for 2-3 minutes each side until golden. Spoon the beetroot salad on top of each fishcake and serve with salad.
