    Smoked Cod Rösti Cakes

    Serves: 4 as a main course or 8 as a starter

    Ingredients

    • 350g traditionally smoked cod fillet
    • 1 x 400g pack Waitrose Rösti Potatoes
    • 1 small egg
    • 1 tbsp lemon juice
    • 1 tbsp chopped fresh parsley
    • Salt
    • Cayenne pepper

    Method

    1. Poach 350g traditionally smoked cod fillet in water for 4-5 minutes or until the fish flakes easily. Remove and leave to cool. Flake into a bowl and add 1 x 400g pack Waitrose Rösti Potatoes. Stir in 1 small egg, beaten, 1tbsp lemon juice, 1tbsp chopped fresh parsley, salt and cayenne pepper to taste.
    2. Press the mixture firmly together to make 8 cakes.
    3. Heat 2tbsp oil in a non-stick frying pan and fry for 3 minutes on each side until golden brown and crisp. Drain on kitchen paper and serve with tomato salsa.
