    Smoked Eel and Warm Potato Salad

    This salad is popular in New York's trendy Gotham Bar and Grill.

    Serves: 4

    Ingredients

    • 600g new potatoes
    • 1 finely chopped shallot
    • Salt and freshly gound black pepper
    • 200g smoked eel fillet
    • 4 tbsp extra virgin olive oil
    • 2 tbsp finely chopped parsley
    • 2 finely chopped garlic cloves

    Method

    1. Boil 600g new potatoes until they are tender enough to be easily pierced with a knife. While the potatoes are cooking, cut 200g smoked eel fillet into 1cm cubes. When the potatoes are cooked, drain and slice into 1cm-thick slices.
    2. In a large bowl, combine 4 tbsp extra virgin olive oil, 2 tbsp finely chopped parsley, 2 finely chopped garlic cloves and 1 finely chopped shallot. Add the potatoes and eel, season and toss together lightly. Serve warm as a starter or a light lunch.
