    Smoked Salmon and Orange Salad

    Scottish salmon has a beautifully rich flavour and this recipe uses tsar fillet, one of the prime cuts. It is easy to cut and looks stunning when sliced into neat medallions. The ready-made dressing has a sweet and sour taste that makes it a perfect partner for the salad.

    Ingredients

    • 3 Oranges
    • 2 small red onions
    • 2 x 150g Waitrose Scottish Smoked Salmon Tsar Fillets
    • 2 x 175ml bottles Waitrose Mustard & Honey Fresh Dressing
    • 225g bag Waitrose Solo Baby Spinach

    Method

    1. With a sharp, serrated knife, cut away the peel and pith from 3 oranges, then cut the flesh horizontally into thin slices.
    2. Peel and thinly slice 2 small red onions and toss together with the orange.
    3. Slice 2 x 150g Waitrose Scottish Smoked Salmon Tsar Fillets into thin medallions and gently heat 2 x 175ml bottles Waitrose Mustard & Honey Fresh Dressing in a small pan. When ready to serve, divide the orange and onion mixture and the smoked salmon between 6 individual plates.
    4. Empty a 225g bag Waitrose Solo Baby Spinach into a large bowl and pour in half the warm dressing. Toss together quickly and spoon the warm salad onto the plates. Serve immediately and hand round the remaining dressing separately.
