    Smoked Salmon and Poached Egg Salad

    Serves: 2

    Ingredients

    • 300g fresh salmon fillet
    • A little butter
    • Salad leaves
    • 2 Rösti potato cakes
    • 2 eggs, lightly poached
    • Vinaigrette
    • Flat leaf parsley

    Method

    1. Thinly sliced 300g fresh salmon fillet, lightly smoked (available from the fish counter) and pan-fry in a little butter until just cooked.
    2. Pile a selection of salad leaves onto 2 plates and top each with a cooked rösti potato cake. Divide the salmon between each and finish each dish with 2 lightly poached large range eggs drizzled with a little vinaigrette.
