    Smoked salmon scrambled eggs

    Delicious breakfast - or anytime - food!

    • Preparation time: 2 minutes
    • Cooking time: 5 minutes
    • Total time: 7 minutes 10 minutes

    Serves: 4


    • butter for toast
    • wholegrain bread
    • 2 tbs chopped chives
    • 120g Scottish smoked salmon
    • 8 eggs


    1. Lightly whisk 8 eggs. Melt a large knob of butter in a non-stick pan andtip in the eggs. Cook for 3–4 minutes, stirring occasionally, until just set but still creamy; season.
    2. Gently fold through 120g Scottish smoked salmon trimmings and 2 tbsp chopped chives.
    3. Serve immediately on buttered, toasted wholegrain bread. Delicious with some truffle oil drizzled over, if you’re feeling decadent.
