    Smoked Trout, Beetroot and Watercress Salad

    Ingredients

    • 250g beetroot
    • 100g bag watercress
    • 125g waitrose hot smoked trout fillets
    • 3 tbsp fromage frais
    • juice from ½ a lemon
    • 2 tsp waitrose creamed horse radish
    • 2 slices crusty bread

    Method

    1. Cut a 250g pack cooked beetroot into wedges and place on a serving platter. Scatter over a 100g bag watercress, then flake 125g Waitrose Hot Smoked Trout Fillets over the top. Mix together 3 tbsp fromage frais with the juice of ½ lemon and 2 tsp Waitrose Creamed Horseradish. Season the dressing and spoon over the beetroot and trout. Serve immediately with crusty bread.
