    Smoked Trout Rolls and Fresh Lemonade

    The rich, smoky trout in these prepare-ahead rolls sits well with the acidity of the capers and lemon, while the zesty lemonade rounds it all off a treat.

    • Preparation time: 30 minutes, plus 10 minutes cooling
    • Total time: 30 minutes, plus 10 minutes cooling 30 minutes

    Serves: 6

    Ingredients

    • Lemonade
    • 150g caster sugar
    • 8 unwaxed lemons, juice (to give about 350ml), plus zest of 2
    • 6 sprigs mint, chopped
    • Smoked Trout Rolls
    • 1 unwaxed lemon, finely grated zest, plus 1 tbsp juice
    • 1 tbsp capers, rinsed and finely chopped
    • A pinch cayenne pepper
    • 125g butter, softened
    • 6 small bread rolls
    • 180g smoked trout, sliced

    Method

    1. Place the sugar, lemon zest and chopped mint sprigs into a small saucepan with 125ml water. Stir until the sugar has dissolved, then boil for 4 minutes until syrupy. Cool for 10 minutes. Stir in the lemon juice, adding 750ml water. Pour into an empty bottle and chill.
    2. To make the trout rolls, beat the lemon zest, chopped capers and cayenne pepper with the butter. Gradually beat in the lemon juice. Smear liberally on the rolls and fill with the smoked trout. Cover with clingfilm and chill until needed.
