    Smoky salsa

    Barbecue sauce adds a rich smokiness to this sauce

    • Cooking time: 15 minutes to 20 minutes
    • Total time: 30 minutes 30 minutes

    Serves: 12


    • 200g tinned chopped tomatoes
    • 1 tsp tomato purée
    • 1 tbsp sunflower oil
    • 1 red onion, chopped
    • 3 garlic cloves, roughly chopped
    • ½ tsp dried chilli flakes
    • 1 tsp smoked paprika
    • 2 tsp dark brown muscovado sugar
    • 75ml white wine vinegar
    • 2 sprigs oregano, leaves only
    • 1 bay leaf
    • 200g barbecue sauce


    1. Heat the oil in a pan over a medium heat and cook the onion for 8 minutes, until soft. Add the garlic, chilli fl akes, paprika and sugar; cook for 1 minute. Add the vinegar, oregano and bay leaf, boil for 1 minute to reduce, then add the remaining ingredients.
    2. Bring to the boil, then simmer for 5 minutes. Discard the bay leaf and whiz the sauce in a blender until smooth. Adjust the seasoning, then leave to cool. Chill until ready to serve.
