    Southern Style Beans with Beef

    Serves: 6


    • 2 tbsp Olive oil
    • 1 Onion, finely chopped
    • 2 Garlic cloves, crushed
    • 1½ tsp Ground cumin
    • 450g Beef mince
    • 410g tin Blackeye beans, drained
    • 400g tin Chopped tomatoes
    • 120g Easy-cook long-grain white rice
    • 1 Green chilli, diced
    • 4 tbsp Chopped coriander, plus 6 sprigs for garnishing
    • 3 tbsp Sour cream
    • 40g Cheddar, grated


    1. Preheat the oven to 200C/ gas 6. Warm the oil in a casserole over a medium-low heat and fry the onions until soft. Stir in the garlic and cumin and sauté for 1 minute, then brown the beef.
    2. Add the beans, tomatoes, rice, chilli and chopped coriander, season with salt and pepper and stir. Dot with the sour cream, sprinkle with the cheese, then cover and bake for 30 minutes.
    3. Take off the lid and bake for a further 5 minutes. Sprinkle over the coriander sprigs and serve.
