    Spaghetti with mussels, garlic and parsley

    Serves: 4

    Ingredients

    • Handful of chopped parsley
    • 350g freshly cooked spaghetti
    • 2 chopped garlic cloves
    • 1kg cleaned mussels
    • 4 tbsp olive oil
    • 200ml dry white wine

    Method

    1. Heat 200ml dry white wine and 4 tbsp olive oil in a large frying pan. Add 1kg cleaned mussels and 2 chopped garlic cloves and cook, stirring, for 4 minutes over a high heat until the mussels have opened.
    2. Discard any mussels that remain closed, then toss in 350g freshly cooked spaghetti and a handful of chopped parsley. Serve immediately.
